Apple Cinnamon Muffin Cake

Have you ever been to a Recipe Swap before? I love love love recipe swaps and when the idea of a virtual recipe swap came to be with Susan I couldn’t be more excited. Susan from The Foodette shared her Apple Cinnamon Muffin Cake recipe with me. I love that this can be for breakfast with coffee or for dessert after your holiday meal. We will be enjoying this Apple Cinnamon Muffin Cake recipe with my husbands family as we celebrate Thanksgiving with them a few days early. All the yummy apple cinnamon muffin cake leftovers will be perfect for breakfast the following day…well if there are any leftovers that is ;-)

Apple Cinnamon Muffin Cake

Ingredients

  • 3 C fuji apple - peeled, cored and chopped
  • 1 1/2 C sugar
  • 2 eggs
  • 1 C vegetable oil
  • 1 TBS vanilla
  • 3 C flour
  • 1 TSP salt
  • 1 TSP baking soda
  • 2 TSP cinnamon
  • Brown Sugar and Nutmeg for topping

Instructions

  1. Preheat oven to 350 degrees
  2. Grease a baking pan
  3. Using 2 bowls combine sugar, eggs, oil and vanilla in 1 bowl and flour, salt, baking soda and cinnamon in the other bowl
  4. Combined wet and dry ingredients and then fold in apples
  5. Batter will be very thick
  6. Sprinkle the top of the batter with brown sugar and nutmeg
  7. Bake for 25-30 minutes or until top is golden brown
