Blueberry Muffin Bites

A little over a month ago I received a beautiful package in the mail from my moms cousin. She had taken the time to compile a bunch of delicious recipes she thought I could share with you on my blog. I finally had some free time and decided to go through them again and pick out some to share with you. Since I had some blueberries left over in the fridge I figured why not whip up some blueberry muffins? When I took them out of the oven they definitely weren’t as pretty as the ones on the recipe page but they were soo tasty! I consider them more like blueberry muffin bites since they don’t really have the height most muffins do.

Blueberry Muffin Bites

Serves: 18-20
  • You will need:
  • 1 stick unsalted butter-room temperature
  • 1 C sugar
  • 2 eggs
  • 1 TSP vanilla extract
  • 2 TSP baking powder
  • 1 TSP kosher salt
  • 2 C all purpose flour
  • 1/2 C whole milk
  • 2 C fresh blueberries
  1. Directions:
  2. Preheat oven to 375 degrees
  3. Place paper liners in muffin tin
  4. In a large bowl beat the softened butter until smooth and add in the cup of sugar
  5. Add in eggs one by one and mix well
  6. Add vanilla, salt and baking powder
  7. Mix until combined
  8. Add in 1 C flour and 1/4 milk
  9. Mix until combined
  10. Add in remaining flour and rest of milk
  11. Continue to miix on medium speed until batter is thick and smooth
  12. Add the blueberries to your batter using a spatula
  13. Gently mix and divide batter evenly
  14. Bake for 18-20 minutes or until golden
  15. Let cool before serving
