Pasta is always a hit in this household, but the usual Spaghetti or even just Mac & Cheese can get boring. This week I decided to switch it up and make Buffalo Chicken Mac & Cheese. What I love about this recipe is you can make it as spicy as you’d like. I am not a huge buffalo fan because I don’t like super spicy things, but this was just the right amount of heat for me and my husband who likes spicy things added extra buffalo sauce to his dish once it was plated. I also loved topping it with ranch dressing, it was perfect and just the right change compared to the regular mac and cheese we usually eat.
Buffalo Chicken Mac & Cheese
Ingredients
- 1 lb small shells
- 3 boneless skinless chicken breast-cooked and cubed
- 4 TBS flour
- 4 TBS butter
- 1 + 1/2 C milk
- 4 oz Monterey Jack cheese-grated (about a half brick) plus more for topping
- 1/3 C shredded cheddar cheese
- 1/3 C buffalo wing sauce
- 1/3 C Panko bread crumbs
Instructions
- Preheat oven to 400 degrees
- Bake chicken on a foil covered pan for 20 minutes
- While chicken is baking cook pasta according to package directions, drain and return to pot
- While the pasta and chicken are cooking heat saucepan over medium heat and add butter
- Add the flour once the butter is melted and bubbly
- Whisk together and then cook for about 1-2 minutes until golden
- Add the milk and turn the heat down low
- Stir until the milk thickens and then add in the cheeses
- Stir until mixture is smooth
- Add wing sauce
- In a lightly greased 9X13 baking dish add the pasta and cubed chicken
- Make sure to mix well so that the chicken is distributed evenly
- Pour cheese sauce on top and make sure to coat the pasta evenly
- Sprinkle with Panko bread crumbs and extra cheese
- Bake at 375 for 30 minutes
- Serve with ranch or blue cheese dressing



In the ingredients it says to have cooked and cubed chicken and then in the directions it says to bake the chicken… Am I cooking the chicken twice?
I did cook the chicken twice, now that you mention it I am going to try and just bake it in the dish once next time I make it. I hope you like it! -Doree

Thank you for the delicious recipe! I seasoned the chicken with garlic powder and montreal seasoning and I used 2 cups sharp cheddar and 2 cups mozzarella instead. THIS WAS AMAZING!!! Seriously, by far one of the most delicious recipes I’ve ever had, and def the best mac n cheese. Can’t wait to make it for a party!
