Cheesy Bacon Quiche

I just love, love, love this recipe! I will admit, it was a tad complicated for me to make, compared to what I usually whip up in the Top Notch Mom kitchen, but I blame it on the fact that I didn’t have the right kind of pie pan. If I would have had the right pan this would have been easy-peasy. One of my husband’s friends actually shared this recipe with me, it was more like “Jeremy said you need to make this for him,” but I will take it. I am always up for trying new things, and I am really excited about having this recipe when our family comes to visit around the holidays. I made it a few weeks ago the night before my friend came to visit and we reheated it in the microwave the next day (and the next day), and it was the easiest and tastiest breakfast ever! I hope you enjoy it as much as my family did, and I hope you definitely think about making it for your family over the holidays.

Cheesy Bacon Quiche


  • For the crust:
  • 1 + 1/2 C all purpose flour
  • 1/2 TSP salt
  • 1/4 TSP baking powder
  • 1/3 C olive oil
  • 4 TBS water or milk (I used milk)
  • For the filling:
  • 2-3 medium sized potatoes-cooked and cooled (I stuck mine in the microwave)
  • 1 + 1/3 C C shredded mozzarella cheese
  • 1/4 C grated parmesan cheese
  • 8 slices of bacon, cooked and crumbled
  • 5 eggs
  • 1 C milk
  • 1 TBS fresh thyme-chopped
  • 3/4 TSP salt
  • 1/4 TSP freshly ground pepper


  1. Preheat oven to 450 degrees
  2. In a medium bowl whisk together the flour, salt & baking powder
  3. In a seperate bowl whisk together the oil and water, then pour over the dry ingredients
  4. Stir with a fork until the dough is evenly moistened
  5. Pat the dough across the bottom of a deep dish 9" pie and prick the bottom all over with a fork
  6. Bake 8 minutes and allow to cool
  7. Turn oven down to 350 degrees
  8. Peel and cube potatoes, spread across the bottom of the crust, cover with mozzarella cheese then parmesan cheese and bacon
  9. In a large bowl lightly whisk the eggs together
  10. Whisk in the milk, thyme, salt & pepper
  11. Slowly pour over the potatoes and cheese
  12. Bake for 35-40 minutes or until firm and golden brown on top
  13. Let cool 10-15 minutes before serving
