Chocolate Chip Muffins

Good Morning!!

Today we are headed back to Maryland after a nice relaxing trip to New Jersey. For once we weren’t rushing to fit everything into 1 weekend. Instead, Matthew and I got to spend a few more days here with my family.

Here are a few photos from our time in New Jersey =)

I’d like to share one of my favorite muffin recipes ever! These Chocolate Chip Muffins are so easy to make and I love that they freeze well.

Chocolate Chip Muffins

  • 2 C all-purpose flour
  • 1/3 C light brown sugar-packed
  • 1/3 C sugar
  • 2 TSP baking powder
  • 1/2 TSP salt
  • 2/3 C milk
  • 1/2 C butter-melted and cooled
  • 2 eggs-lightly beaten
  • 1 TSP vanilla extract
  • 1 package milk chocolate chips

  1. Preheat your oven to 400 degrees
  2. Grease 12 muffin cups
  3. In a large bowl stir together flour, sugars, baking powder and salt
  4. In a separate bowl stir together milk, eggs, butter and vanilla extract until well combined
  5. Slowly add the milk mixture to the dry ingredients and stir to combine
  6. Fold in chocolate chips
  7. Spoon 3/4 batter into muffin cups
  8. Bake for 15-20 minutes or until tooth pick comes out clean
  9. Cool for 10 minutes and remove from muffin tan to finish cooling
  10. Serve warm or completely cool
  11. {These also freeze well}
