The perfect family friendly recipe

Holy cow… it’s May 1st! I cannot believe how fast time has gone by since I had Matthew; he will be 14 months old on May 8th. With a toddler always on the move, I am constantly on the look out for simple yet delicious recipes. I had pinned this recipe on Pinterest and couldn’t wait to try it out.  What I also loved about this recipe is it was the perfect thing for Matthew to eat too! I could cut everything up into bite sized pieces and let him feed himself. His tray was empty and not much of it ended up on the floor so I’d say he’d enjoyed it too.

You will need:

  • 4 medium potatoes 
  • 2 cans green beans
  • 1 lb chicken breast
  • 1 package italian dressing mix
  • 1/2 cup butter

Directions:

  1. Lightly spray your baking dish with cooking spray
  2. Cut potatoes, line up in pan (see picture above)
  3. Cut chicken in small pieces, place next to potatoes, down the center of the baking dish
  4. Line green beans next to chicken
  5. Slice butter and distribute evenly on top of potatoes, chicken & green beans
  6. Sprinkle italian dressing mix over top of the dish
  7. Cover with foil and bake at 350 degrees for 45 minutes

  5. Thank you so much for the recipe! I’m a full time mom of 2 beautiful girls, with a full time job. When we aren’t rushing around from one sports practice to another, I like to give my family a home cooked meal. Often times, by the I get home from work, cook supper, we eat and then I clean up the mess…it doesn’t leave much time for family time. I can’t wait to try this recipe, not only is everything in ONE dish, which will make clean up so much faster, but it’s simple and only takes 45 minutes! I’m beyond excited to try it and so thankful you posted it!

    • Aw I totally understand the hassle and mess of cooking dinner, especially after a long day. If you are on Pinterest, check out one dish meals or one pot meals, they are super tasty. I have a one pot pasta dish you can search for on my blog. Easy to make, easy clean up and the more time you have to spend with your girls.     hello I have made this dish a couple of time and for some reason it takes longer then 45 min for my potatos to get done. I don’t know if I am cutting them to thick or what. but me and my family love this dish.

      Have you tried cutting the potatoes smaller? I’ve never had a problem with them not cooking in that time frame, but all ovens are different. Glad you and your family love it!

  8. This was deeeelish! However, I baked it for 1 1/2, left the breasts whole and for the last 15/20 mins sprinkled shredded cheese over all and topped that with some panko. YUM!

  13. I’ve made this many times and everyone loves it. Our favorite is broccoli instead of green beans. And to make it even easier I use tatertots! Note: My chicken always takes longer than 45 min. even when cut into smaller pieces.

  14. Do you use salted or unsalted butter?
