French Toast Cupcakes with Maple Frosting

frenchAre you ready for the most amazing cupcake recipe EVER? This is hands down the best dessert I’ve ever made. The cupcake itself is so moist and the icing is just the right amount of sweetness. I am in love and I can’t wait to make these again.  These are so good you will definitely want to eat them for breakfast!

French Toast Cupcakes with Maple Frosting

So delicious you’ll want them for breakfast!
  • Cupcake:
  • 2 1/2 C flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/4 tsp ground ginger
  • 1/2 tsp salt
  • 1 stick unsalted butter-softened
  • 1/2 C light brown sugar
  • 1 C maple syrup
  • 2 tsp vanilla extract
  • 2 eggs
  • 1/2 C buttermilk
  • Frosting:
  • 1 C unsalted butter-softened
  • 3 oz cream cheese-softened
  • 2/3 C dark brown sugar
  • 3/4 C maple syrup
  • 1 1/2 C confectioners sugar
  1. Cupcakes:
  2. Line pan with cupcake liners
  3. Preheat oven to 350 degrees
  4. Mix together flour, baking soda, baking powder, salt and ginger
  5. Beat butter and brown sugar till light and fluffy
  6. Add eggs, syrup and vanilla
  7. Once mixed, add flour mixture and buttermilk- alternate flour and buttermilk
  8. Fill cupcake pan
  9. Cook for 18-20 minutes or until knife comes out clean
  10. Cool before frosting
  11. Frosting:
  12. Beat butter, cream cheese and brown sugar until fluffy
  13. Slowly add confectioners’ sugar and beat on high until the icing is fluffy
