Fresh Herb and Scallion Frittata

Happy Friday!!

This Fresh Herb & Scallion Frittata would be delicious for breakfast this weekend and it’s super easy to make. I don’t have an oven proof skillet so I just threw everything into a oven proof baking dish, spooned ricotta cheese on top, and baked it in the oven for 25 minutes. When I say it was a huge hit in our household I am not even close to kidding. My husband basically inhaled it and this delicious frittata was gone in no time at all. Plus, it’s the perfect “breakfast for dinner” meal. I would also recommend adding anything that would be good in an omelet to this. Feel free to add onions, tomatoes, ham, peppers, etc. Enjoy!

Fresh Herb and Scallion Fritata

Ingredients

  • 1 TBS olive oil
  • 1 bunch of scallions - chopped
  • 8 large eggs
  • 1 TBS thyme
  • 1 TBS basil
  • 1 TBS minut
  • 1 TBS chives
  • 1 TBS parsley
  • 1/2 TSP kosher salt
  • 1 TSP black pepper
  • 2 TBS milk
  • 1/2 C ricotta cheese

Instructions

  1. Using a large oven proof skillet warm olive oil oven med heat
  2. Sautee the scallions until softened (2-3 minutes)
  3. Beat the eggs in a separate bowl and add the herbs, salt, pepper and milk
  4. Add the warm scallions and stir
  5. Add more oil to the skillet if it looks dry
  6. Add the egg mixture to the pain (make sure it's spread evenly)
  7. Turn your broiler on
  8. Place your skillet in the oven
  9. When the top is starting to look like it's set top the frittata with ricotta cheese and let broil another 2-3 minutes or until the top is slightly browned and the ricotta looks melted
  10. Remove the pan from the oven (the handle will be hot)
  11. Serve immediately
  12. Enjoy!

Notes

If you don't have an oven proof skillet then this can be made in a baking dish. Make sure to spray the dish with cooking spray, add the egg mixture, top with cheese and bake in the oven at 350 degrees for 30 minutes.
