Gluten-Free Double Chocolate Brownies

What a great first month back on the blog, I am so proud of what Top Notch Mom has become and I am even more excited about what’s to come. Coming next week to Top Notch Mom will be Toddler Tuesdays-crafts, recipes & fun for toddlers.

Now onto these gluten-free double chocolate brownies. These brownies were my first attempt at anything gluten-free. I knew expectations were high for this since my taste testers were 100% gluten-free. I thought to myself, what if they don’t taste right? What if they aren’t moist enough? I had tried gluten-free brownies in the past that had left me unsatisfied, so I knew I had a lot of work cut out for me. To my surprise they came out great and I knew I had to share them with you. They are moist, chewy & fudge like, you won’t be sorry!

You will need:

  • 9 X 9 baking pan coated with cooking spray
  • 1 1/4 cups semi-sweet chocolate chips
  • 1 (15 oz) can chickpeas-rinsed and drained
  • 1 egg
  • 3 egg whites
  • 1 1/2 tsp vanilla extract
  • 2 tbs canola oil
  • 1/2 tsp baking powder
  • 1/2 cup packed brown sugar
  • Pinch of salt

Directions

  1. Preheat oven to 350 degrees
  2. Melt chocolat chips in microwave, 30 second increments until smooth-cool slightly
  3. Place beans, egg, egg whites, vanilla & oil into food processor-blend until smooth
  4. In a small bowl, mix together baking powder, brown sugar & salt-add to food processor and blend together
  5. Gradually add chocolate to food processor until blended together
  6. Pour brownie batter into a 9 X 9 baking pan that has been coated with cooking spray
  7. Bake at 350 degrees for 30-35 minutes
  8. Enjoy
