Gluten Free – Watermelon & Feta Salad

This delicious and easy salad recipe is for my lovely gluten free TNM followers. Trust me, I like to please everyone and love all of your requests, so keep those emails coming! I was going to do a quick recap on our busy day touring but I am super tired, I promise I will have it up sometime tomorrow. This 3 ingredient salad will take you less than 5 minutes to make and it’s got a perfect blend of sweetness from the watermelon and saltiness from the feta cheese.

Gluten Free – Watermelon & Feta Salad

Ingredients
  • You will need:
  • 1/2 lb watermelon – 1 inch diced cubes (about 4 cups)
  • 2 oz crumbled feta cheese
  • 2 tbs chopped mint
Instructions
  1. Directions:
  2. Combine watermelon, feta cheese and mint in a bowl
  3. Cover and chill for 1 hour
  4. Enjoy!
