This delicious and easy salad recipe is for my lovely gluten free TNM followers. Trust me, I like to please everyone and love all of your requests, so keep those emails coming! I was going to do a quick recap on our busy day touring but I am super tired, I promise I will have it up sometime tomorrow. This 3 ingredient salad will take you less than 5 minutes to make and it’s got a perfect blend of sweetness from the watermelon and saltiness from the feta cheese.
- You will need:
- 1/2 lb watermelon – 1 inch diced cubes (about 4 cups)
- 2 oz crumbled feta cheese
- 2 tbs chopped mint
- Combine watermelon, feta cheese and mint in a bowl
- Cover and chill for 1 hour
