Gruyere Orzo

Ingredients

  • 1 TBS extra virgin olive oil
  • 1 large shallot - minced
  • 2 cloves garlic - minced
  • 2 small zucchinis - diced
  • 1 C cherry tomatoes - halved
  • 2 C uncooked orzo
  • 1 can diced tomatoes
  • 3/4 C shredded gruyere cheese
  • 2 TBS chopped chives
  • Salt + Pepper to taste

Instructions

  1. Heat olive oil on medium in a medium skillet
  2. Add the minced shallots and sauté 2 minutes
  3. Add the garlic and sauté another minute
  4. Add the zucchinis and cherry tomatoes
  5. Salt + Pepper
  6. Continue to sauté until they start to brown on both sides about 4-5 minutes
  7. Cook orzo according to package
  8. Drain and add to the sautéed vegetables
  9. Add cheese, 1 can diced tomatoes and 2 tbs butter
  10. Combine and add salt and pepper to taste
  11. Serve with chopped chives on top
