Easy & Delicious Cinco De Mayo Appetizer

Nothing will ever compare to the Cinco De Mayo party we had last year. It was one of the first parties that I put together in Maryland with our new friends. It’s amazing to look back on the past 2 years we’ve been living here. Although I miss New Jersey, I am so grateful for the friends I’ve made here and I can’t imagine them not being a part of our life. Now back to Cinco De Mayo, even though we aren’t having a party ¬†this year, that definitely isn’t going to stop me from sharing this awesome mexican themed appetizer, perfect for your party weekend or any other get together for that matter.

You will need:

  • 2 avocados
  • 12 hard boiled eggs
  • 2 tbsp lime juice
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 2 tsp minced galic
  • 4 tsp finely chopped cilantro
  • Paprika

Directions:

  1. Cut eggs in half and remove yolks, place the yolks in a small bowl
  2. Add avocado
  3. Add lime juice, salt, onion powder, garlic & cilantro
  4. Mash the egg yolk/avocado mixture
  5. Spoon or pipe the mixture into the halved eggs
  6. Sprinkle with paprika
