Lasagna Roll Ups

At the beginning of each week I like to sit down and plan out a menu and then grocery shop for the specific items I need for each meal. One day each week we have a pasta dish. Instead of the same pasta dish I like to mix it up, that’s when I decided to give this recipe a go. I definitely suggest trying this out for dinner, you won’t be sorry. Enjoy!

You will need:

  • 14 oz shredded mozzarella cheese
  • 8 uncooked lasagna noodles
  • 3/4 cup ricotta cheese
  • 1 large egg white
  • 1/3 cup parmesan cheese
  • 4 tomatoes, thinly sliced
  • 1/4 cup fresh basil
  • 1 cup marinara sauce (I just bought a jar of it at the store but you could make your own)
  • Black pepper
  • Italian seasoning
  • 11 x 7 baking dish

Directions:

  1. Preheat oven to 350 degrees
  2. Cook pasta to al dente
  3. Drain pasta
  4. Align lasagna noodles in a single layer on wax paper
  5. Make filling: combine ricotta cheese and egg white. Then stir in the parmesan cheese. Mix in 1o oz mozzarella cheese. Season with black pepper and italian seasoning to taste.
  6. Place 1/4 cup of the cheese mixture over each individual lasagna noodle.
  7. Line 3-4 tomato slices over the cheese mixture
  8. Sprinkle with fresh basil
  9. Roll lasagna noodles
  10. Spread 1/4 cup pasta sauce in the bottom of an 11 x 7 baking dish
  11. Align roll ups, seem side down in the baking dish
  12. Top each roll with marinara sauce
  13. Sprinkle top with remaining mozzarella cheese
  14. Bake for 30 minutes
