At the beginning of each week I like to sit down and plan out a menu and then grocery shop for the specific items I need for each meal. One day each week we have a pasta dish. Instead of the same pasta dish I like to mix it up, that’s when I decided to give this recipe a go. I definitely suggest trying this out for dinner, you won’t be sorry. Enjoy!
You will need:
- 14 oz shredded mozzarella cheese
- 8 uncooked lasagna noodles
- 3/4 cup ricotta cheese
- 1 large egg white
- 1/3 cup parmesan cheese
- 4 tomatoes, thinly sliced
- 1/4 cup fresh basil
- 1 cup marinara sauce (I just bought a jar of it at the store but you could make your own)
- Black pepper
- Italian seasoning
- 11 x 7 baking dish
Directions:
- Preheat oven to 350 degrees
- Cook pasta to al dente
- Drain pasta
- Align lasagna noodles in a single layer on wax paper
- Make filling: combine ricotta cheese and egg white. Then stir in the parmesan cheese. Mix in 1o oz mozzarella cheese. Season with black pepper and italian seasoning to taste.
- Place 1/4 cup of the cheese mixture over each individual lasagna noodle.
- Line 3-4 tomato slices over the cheese mixture
- Sprinkle with fresh basil
- Roll lasagna noodles
- Spread 1/4 cup pasta sauce in the bottom of an 11 x 7 baking dish
- Align roll ups, seem side down in the baking dish
- Top each roll with marinara sauce
- Sprinkle top with remaining mozzarella cheese
- Bake for 30 minutes
