Making things happen!

So much to come in 2014 and it’s only just begun! My mom has always pushed me to make things happen. When I was in high school I wanted to work on movie and tv sets.  I spent all four years of high school in the television production program and senior year I was on the morning show. I thought I had my life all figured out. I spent a couple of months watching Hilary Duff film a movie in a local town a few minutes from my parent’s house. It was so awesome to see it up close, but at the same time I realized how much standing around everyone did and it seemed boring. I wanted something that was going to test me every day and push me to better at whatever it is I decided to do. I graduated high school and went to community college to get my associates degree. I still didn’t know what I wanted to do, but I went in the direction of education and possibly teaching one day. Two years went by and I wasn’t sure if that’s what I wanted to do anymore.

It’s very frustrating when you feel like you’ve had your whole life planned out and then things keep changing. I moved to Maryland with my husband after going to college without a plan or future. While here I went to school to be a dental assistant and a few months into the program I found out I was pregnant.  I did finished school, but decided to be a stay at home mom. I finally felt like I had a purpose, yes I stay home with my son but honestly it’s the best job in the world. As tiring and frustrating as it can be sometimes I wouldn’t change it for the world. Almost 2 years ago I decided that I needed to do something else. It wasn’t that the whole stay at home mom thing wasn’t working for me, Matthew was only a month old at the time.  I just always have too much on my plate so why not add something else?

I decided to start blogging about motherhood, baking and my life here in Maryland. At first it was for my family and friends back in NJ, this way they could follow my life if they didn’t have a Facebook etc. Now I have followers from all over the United States and virtual friends I wouldn’t have met if it weren’t for this blog. It’s hard to believe I am coming up on two years of blogging right here on Top Notch Mom. It’s honestly been the most amazing and terrifying experience. I have mostly taught myself everything I have needed to know to get where I am, with a little help from some pretty amazing mentors. In all that this experience has taught me and I’ve been through, I wouldn’t change any of it. It took me a year to really establish myself and now that I am almost in my second year I have begun to expand my brand even further. Why not add something else to my plate?

I’ve started teaching cooking classes locally. I am still in the process of a cook book, but that’s on the back burner right now. A few weeks ago I hosted my very first cooking class for a few friends. I wanted to practice in front of the most supportive group of women I have in my life. It was way out of my comfort zone, but so worth it! We had an amazing time and I can’t wait to continue on this new chapter.

Easy Penne Vodka

Ingredients

  • 16 oz penne pasta
  • 45 oz ragu sauce
  • 1 medium onion - diced
  • 2 TBS extra virgin olive oil
  • 1 TSP garlic - moinced
  • Salt & Pepper
  • 1/4 C vodka
  • 1/2 C heavy cream

Instructions

  1. Saute garlic + onion until translucent - 3 to 5 minutes
  2. Add ragu sauce and cook 5 minutes on medium
  3. Start boiling pasta water
  4. After sauce has been cooking for 5 minutes add vodka
  5. Simmer on medium-low 15 minutes
  6. Once water has started boiling add pasta and cook 11 minutes
  7. Add heavy cream and cook on low another 3 minutes
  8. Drain pasta and combine with sauce

  1. It’s definitely hard when things don’t work out as planned, but I’m glad that you’ve found happiness being a stay at home mom. I’ve been a SAHM for 2 and a half years now, and it’s been really fun to see that each day holds something new and different. I usually focus more on recipes etc. but other night I sat down and started typing and all of this poured out of my heart. I will be following you on Pinterest & Twitter as well.
