Happy National Chocolate Chip Cookie Day!

Last year I posted on Top Notch Mom my favorite Chocolate Chip Cookie recipe this year I thought I’d mix it up a bit. Not too long ago I had a delicious cup of Salted Caramel Ice Cream, I must admit I was a tad skeptical when I thought about the combination of Salt & Caramel but I must say it was the best ice cream I’ve ever had. It inspired me to make these cookies I am going to share with you today.

Salted Caramel Chocolate Chip Cookies

You will need:

  • 1.5 sticks butter (salted) softened
  • 2 cups flour
  • 1/2 tsp baking powder
  • 1 cup light brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 12 wrapped caramels, cut into 4 pieces each
  • seasalt

Directions:

  1. Preheat oven to 325 degrees
  2. Cream butter & sugar together
  3. Add egg, egg yolk & vanilla, mix
  4. Slowly add flour until dough forms
  5. Add chocolate chips
  6. Chill dough in the fridge for 20 minutes
  7. Drop tablespoons of dough onto baking sheet
  8. Press caramels onto cookies
  9. Bake 10 minutes or until edges begin to turn golden
  10. Sprinkle with seasalt
  11. Let cool & enjoy
