I absolutely love recipes that start with the words “no bake.” They are especially great when you’re in need of a tasty treat and don’t have a lot of time on your hands.
Sorry I didn’t get around to posting a recap of our busy day on the island. I will definitely have one for you on Monday though.
Now onto these quick and easy No Bake Energy Bites
- You will need:
- 1 C dry oatmeal
- 1/2 C chocolate chips (the mini ones are good too)
- 1/2 C peanut butter
- 1/2 C ground flax seed
- 1/3 C honey
- 1 tsp vanilla
- Combine all ingredients into a bowl, if you feel as though your mixture is too wet add some more oatmeal until you have the right consistency
- Roll into bite size balls
- Refrigerate for 45 minutes
