Pasta is a pretty regular meal in our household, I’d say at least once a week. I am always looking for ways to change it up and try different things so when I came across this One Pot Pasta dish from Martha Stewart I knew I was on to something. With a couple tweaks here and there I came up with my own version and thought it would be perfect for my TNM readers.
One Pot Pasta
Ingredients
- 12 oz linguini
- 1 can - 14.5 oz - petite diced tomatoes
- 1 medium yellow onion - cut into strips
- 4 cloves garlic - sliced
- 1 TSP red-pepper flakes
- 2 TBS Extra Virgin Olive Oil
- 4 C chicken or vegetable broth
- Salt & Pepper to taste
- 1 bunch of basil
- Parmesan cheese
Instructions
- Combine linguini, tomatoes, onions, garlic, red-pepper flakes and oil in a large pot
- Add 4 C of broth
- Cover pot and bring to a boil
- Once boiling, reduce to a low simmer and keep covered
- Cook 10-12 minutes stirring often
- Make sure to salt and pepper to taste
- Cook until almost all liquid has evaporated
- During the last 2 minutes add the basil leaves and stir to make sure evenly distributed
- Serve with parmesan cheese and enjoy!
