Oreo Cheesecake Bites

If you’re looking for a crowd pleasing recipe then you’ve come to the right place! Not only will your guests love this dessert but it feeds a ton so the bigger the crowd the better. I made this over Christmas when my family was in town and I still have half of the 9X13 pan cut up into cubes and in my freezer. Oreo cookies & cheesecake rolled into one delicious bite, what’s better then that?

Oreo Cheesecake Bites

  • 36 Oreo Cookies - divided
  • 1/4 C butter
  • 4 (8oz) packages cream cheese - softened
  • 1 C granulated sugar
  • 1 C sour cream
  • 1 TSP vanilla
  • 4 large eggs
  • 4 oz semisweet chocolate

  1. Preheat the oven to 325°F.
  2. Line a 9×13-inch baking pan with foil or parchment paper, make sure ends extending over sides. Finely crush 24 Oreo cookies, melt 1/4 C butter and mix with crumbs.
  3. Press onto bottom of prepared pan.
  4. In a large bowl combine the cream cheese and sugar with mixer until blended.
  5. Add sour cream and vanilla and mix well.
  6. Add eggs one at a time beating after each until blended.
  7. Chop remaining cookies and gently fold into batter, pour over crust.
  8. Bake the cheesecake for about 40 minutes or until the sides are set and the center is set.
  9. Cool completely on a wire rack in the pan (mine took a good hour or so to cool).
  10. When the cheesecake is completely cooled cover with plastic wrap and refrigerate for at least 2 hours.
  11. Once chilled remove the cheesecake using the overhang and cut the cheesecake into bite-sized pieces.
  12. Place the cheesecake bites on a wax or parchment paper-lined baking tray.
  13. Melt the semisweet chocolate ( I use a pot with boiling water and a metal bowl onto, my DIY version of a double boiler. A microwave would work good too, just be careful not to burn the chocolate).
  14. Drizzle the chocolate over the cheesecake bar and place them back in the refrigerator to chill until ready to serve.
  15. *If you decide to freeze them then make sure to defrost them in the refrigerator and serve chilled.
  16. **They are good for up to one month frozen
