Philly Cheesesteak Stuffed Peppers

I was tired of the same old stuff for dinner, so I decided to try something new. I’ve only ever had a Philly Cheesesteak on bread before so when I saw this Philly Cheesesteak Stuffed Pepper recipe I knew I had to try it. I loved how easy it was to make and it came out great!

You will need:

  • 2 Large Green Bell Peppers
  • 8 oz Thinly Sliced Roast Beef
  • 8 Slices Provolone Cheese
  • 1 Medium Sweet Onion
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Butter
  • 1 Tablespoon Garlic
  • Salt & Pepper

  1. Preheat oven to 400 degrees
  2. Cut peppers in half lengthwise
  3. Remove seeds & ribs- rinse
  4. Slice onions and saute over medium heat with olive oil, butter, garlic, salt & pepper until the onions are caramelized-about 10 to 15 minutes
  5. Add sliced roast beef to the onion mixture and cool an additional 10-15 minutes
  6. Line each pepper with a slice of provolone cheese
  7. Fill each pepper with meat/onion mixture
  8. Top each pepper with another slice of provolone cheese
  9. Bake for 20-25 minutes or until top is golden brown
  10. Enjoy!
