Skillet Rosemary Chicken

Half way through the week, YAY! I just read we are now in a Winter Storm Warning, we are suppose to get 8-10″ of snow starting at 7 tonight.  I am having major anxiety over the thought of that much snow. Are you suppose to get any snow by you?

On another note, I have been trying to mix up the usual dinners we have been eating and decided to whip out my skillet. I have been putting off cooking with it because it still needed to be seasoned. I had some time to myself over the weekend, so while I was cleaning the house I seasoned the cast iron skillet. This meal would work in any pan that is oven proof and capable of going from the stove top to the oven without a problem.

Skillet Rosemary Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • Small red-skinned potatoes
  • 2 sprigs fresh rosemary + 1 TBSP leaves
  • 1 clove garlic-minced
  • Pinch of red pepper flakes
  • Juice of 2 lemons-reserve squeezed halves
  • 1 TBSP extra-virgin olive oil
  • 2 TSP sea salt

Instructions

  1. Preheat oven to 450 degrees
  2. Cover the potatoes with cold water in a pot
  3. Bring to a boil over medium-high heat and cook until tender, about 8 minutes
  4. Drain and set aside
  5. Combine the rosemary leaves, garlic, salt and red pepper flakes in a small bowl
  6. Add the juice of 1 lemon and 1 TBSP olive oil and make sure to mix together
  7. Coat the boneless skinless chicken breasts with the above mixture
  8. Heat a large cast-iron skillet over medium-high heat
  9. Add the chicken and cook covered for 5 minutes
  10. Turn the chicken and add potatoes to the skillet
  11. Drizzle with the juice of the remaining lemon
  12. Add the rosemary sprigs and the squeezed lemon halves to the skillet
  13. Transfer to the oven and roast, uncovered, until the chicken is cooked, about 20 minutes

    Doree, all of your dishes look fabulous, so well displayed and yummy delicious! Yes, we were expecting some snow and we got over a foot of it. Followed by sleet/rain, it got heavier as the day wore on. More snow tonight. We are ready for Spring!
