Spring Cleaning and Such….

After a crazy first week back to school I spent my Friday off doing some much needed spring cleaning. While Matthew napped I managed to get the closets organized, the laundry room in order and kitchen cleaned, as well as all of the laundry that was piling up washed.

Tonight Jeremy & I ate at our favorite sushi restaurant, Fuji Sushi. The food is amazing and the prices are great! I didn’t think I’d be able to find a place that was half as good as the ones I used to go to in NJ, but this is definitely #1 on my list right now. My sushi recommendation is their Sunshine Roll – It is out of this world.

I am looking forward to this weekend’s events!

Tomorrow we are having some friends over for our annual Cinco De Mayo party, I am so excited!! I’ll definitely be posting pictures and recipes on Sunday, so be on the look out!!

I haven’t decided what serving trays and bowls I am going to be using for the party yet but I made sure to get most of them out today while I was cleaning.

On Sunday we are going to the Towsontown Spring Festival with a few of our friends. I’ve never been before but it sounds like it is going to be a lot of fun!!

Well, I figured I’d leave you all with a simple and fun recipe for the weekend =)

Cookie Dough Bites

They are sooo easy to make and extremely addicting, it’s hard to have just one!

Hands-On Time: 20 minutes
Ready In: 1 hour
Yield: 2 dozen cookies

Ingredients

1 cup salted butter, softened
1½ cups packed light brown sugar
1 teaspoon vanilla extract
2 cups flour
6 ounces miniature chocolate chips

Directions

  1. Cream butter and sugar together.
  2. Add remaining ingredients and mix well — use your hands to get it together the best.
  3. Roll into 1-inch balls.
  4. Refrigerate until firm, about 30 minutes. Dip in chocolate, drizzle with chocolate or eat as is — equally delicious no matter what!
  5. Let stand at room temperature for about 10 minutes before serving.
  6. Store in the refrigerator.
