Strawberry Mango Salsa

I’m a little sad our Cali trip is coming to an end but I am so excited to get home and see Matthew. I missed him soo much but I know he had a blast spending the week with Grandma. We had such a wonderful week in San Diego, I definitely see 2 future blog posts dedicated to this trip. So much to review on and so many memories to share. I must say I was pretty proud of myself for accomplishing all but one thing on my list of things to do while vacationing in San Diego.

Now lets start off the weekend right, here is a delicious Strawberry Mango Salsa recipe you MUST try! It’s super addicting so if you’re serving it to a large crowd I recommend doubling the recipe. I also served it with a cinnamon cracker I found at the grocery store but it would also go great on a graham cracker or tortilla chips.

Strawberry Mango Salsa

The perfect combination of sweet and spicy
  • 1 pint strawberries-diced
  • 1/2 C Mangos-diced
  • 1 jalapeño-seeded and minced
  • 1/2 red onion-diced
  • 2 tbs fresh cilantro-chopped
  • 2 tbs fresh mint-chopped
  • 2 tsp honey
  • 2 tbs lemon juice
  1. In a large bowl combine strawberries, mango, jalapeño, onion, cilantro, honey and lemon juice.
  2. Refrigerate for 30 minutes
  3. Enjoy!
*You can add lime juice instead of lemon juice *For a hotter salsa leave some seeds in the jalapeño
