Sweet Potato Casserole

I am so excited to be a part of this fabulous Thanksgiving Progressive Feast with all of the wonderful bloggers listed above. Make sure you head on over to each and every one of their blogs and show them some love. I chose a Sweet Potato Casserole dish that will be the perfect side to your Thanksgiving meal. It was given to me by a dear friend of mine at a recipe exchange party a few months back. Make sure you have the recipe handy because your family will definitely be asking you for a copy of it.

Sweet Potato Casserole


  • 3 C sweet potatoes-cooked and drained and peeled
  • 1 C white sugar
  • 1 stick margarine-melted
  • 2 eggs
  • 1 TSP vanilla
  • For the topping:
  • 1 C brown sugar
  • 1/3 C flour
  • 1 C chopped pecans
  • 1 stick margarine - melted


  1. Once potatoes are cooked and cooled make sure to peel them before mashing potatoes
  2. Add eggs, sugar, melted margarine and vanilla
  3. Mix well with mixer
  4. Place in casserole dish and top with the following mixture:
  5. Blend together brown sugar, flour, chopped pecans and melted margarine
  6. Cover sweet potatoes with this mixture
  7. Bake at 350 degrees for 45 minutes

  4. We made this as a side dish for Thanksgiving dinner. It was very easy to make and a wonderful complement to our turkey and other side dishes. This is the first time I tried a sweet potato casserole and it was delicious!
