This recipe came from a book that someone recently shared with me, I love this recipe because it’s simple and easy. Simple and easy is something I strive for every day because I am constantly on the go with a 16 month old. I love freezer meals like chicken nuggets and sweet potato fries for Matthew but when I came across this recipe I knew it would take me just as long to make as a it would putting something from the freezer section of the grocery store in the oven. The only difference though was that I knew it would taste so much better and Matthew would love it.

Oven Baked Chicken Fingers

  • You will need:
  • 1 C italian bread crumbs
  • 2 T grated parmesan cheese
  • 1 clove garlic-minced
  • 1/4 C oil
  • 3 boneless skinless chicken breasts
  1. Directions:
  2. Preheat oven to 425 degrees
  3. Once your oven is heated, pop your baking sheet in for 5 minutes
  4. Combine bread crumbs and cheese in a dish
  5. Place chicken between 2 sheets of plastic wrap and flatten to 1/2 inch
  6. Cut into strips
  7. Dip strips into oil and bread crumb mixture until coated
  8. Coat preheated baking sheet with vegetable spray and place chicken strips on to it
  9. Bake for 12 to 14 minutes, turning after 10 minutes
