I’m usually all for frozen nuggets from the freezer section at the grocery store for Matthew, but once I found this recipe on Pinterest from Savvy Mom I knew I had to give them a try. I’ve never had chia seeds before so I wasn’t sure what to expect, but boy were these chicken strips tasty. I had to substitute a few ingredients because I didn’t have everything listed and they still came out great! The yogurt and mustard marinade keeps the chicken so moist that even when I reheated them the next day they were just as good.
Toddler Tuesday – Chia Chicken Strips
Ingredients
- 5 boneless skinless chicken breasts
- 2 (6oz) containers of plain yogurt
- 2 TBS grainy mustard
- 2 C italian bread crumbs
- 2 TSP garlic pepper
- 2 TSP kosher salt
Instructions
- Slice each boneless skinless chicken breast into strips
- Combine the yogurt and mustard into a bowl and dip each chicken strip into it laying them on a baking dish to marinade for 45 minutes
- Preheat your oven to 400 degrees
- Once the chicken is done marinading dip each strip into the breadcrumb, salt and garlic pepper mixture coating all sides
- Bake for 20 minutes or until cooked through and golden brown
