Toddler Tuesday-Chili Mac & Cheese

After complaining about the time change yesterday I actually think I am not bitter about it anymore. I felt like that extra hour yesterday helped me get a lot accomplished. I was able to get a head start on a couple of meals for dinner this week and even made some yummy cookies I am looking forward to sharing with you in my Favorite Family Recipes post next week!

I’m sure the title of this recipe I am sharing with you has caught you off guard a little bit…Trust me though…I am a firm believer in feeding Matthew the same foods we eat. I don’t want to make 2 meals for dinner unless I really have to. This recipe is great because it has a lot of flavor and the chiles and chili powder help to introduce a new spice to his palate. I also like that the noodles are big enough that he can just grab them and pick them up one by one with his hands or use his fork if he’s feeling up to it.

Chili Mac & Cheese


  • 1 lb ground beef - 80% lean
  • 2 C uncooked rotini pasta
  • 1 TSP chili powder
  • 2 1/4 C water
  • 1 can diced tomatoes with green chiles - undrained
  • 2 C shredded mexican flavored cheese
  • Addition chili pepper for the top when finished if desired


  1. Cook ground beef in a skillet oven medium-high heat, once cooked thoroughly make sure to drain
  2. Stir in uncooked pasta, chili powder, water and diced tomatoes
  3. Heat to boiling and stir frequently
  4. Reduce heat to medium-low; cover and simmer 12 minutes or until pasta is tender
  5. Remove from heat; let stand uncovered 5 minutes
  6. Stir in cheese until melted
  7. Sprinkle with additional chili powder if desired
