Toddler Tuesday – Mini Ham & Cheese Muffins

Let me start off by saying that, just like most of the other Toddler Tuesday recipes I post, these  Mini Ham & Cheese Muffins are perfect for adults too! Matthew usually has the same 3 things for breakfast throughout the week. Whether it be pancakes, french toast sticks or eggs I am sure he’s bored of them. I wanted to try something new so I made a Ham & Cheese Muffin recipe more kid friendly by baking it in mini muffin pans. He really enjoys them and the best part about them is I can make 2 dozen and freeze them and reheat them anytime. I also love that I can incorporate different spices into it and add other meats and veggies to change it up.

Toddler Tuesday – Mini Ham & Cheese Muffins

Ingredients
  • You will need:
  • 1 1/2 C all purpose flour
  • 1 C whole wheat flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp dried oregano
  • 2 tsp granulated sugar
  • 1 C greek yogurt
  • 1/4 C milk
  • 2 eggs
  • 1/4 C canola oil
  • 1 C ham – finely chopped
  • 1 C cheddar cheese – shredded
Instructions
  1. Directions:
  2. Preheat oven to 350 degrees
  3. Spray mini cupcake/muffin pan
  4. Combine flours, baking soda, baking powder, oregano and sugar in a large bowl
  5. In a separate bowl combine milk, yogurt, eggs and oil
  6. Add the wet ingredients to the dry ingredients and stir until mixed well
  7. The batter will be thick, if it seems too dry add a few drops of milk
  8. Fold in cheese and ham
  9. Fill muffin cups
  10. Bake for 15 minutes or until golden brown
  11. Cool on rack
  12. Enjoy!
