Last weeks Toddler Tuesday post involved the same ingredient, tortillas. Matthew loved the mini pizzas so much I decided I’d try out something else. We were leaving for vacation and I wanted to use up the left over tortillas and some cheese I had in the fridge so I decided to make Mini Quesadillas. Matthew isn’t a picky eater and I think it’s because we are always introducing him to new things and his dinner is almost always the same thing that we are eating. I also liked this recipe for him because it get’s him to try different cheese types and you can make this a variety of ways, add steak or chicken or just keep it plain with the cheese of your choice.
Toddler Tuesday – Mini Quesadillas

Ingredients
- You will need:
- Tortillas-1 tortilla makes about 6 circles if using the bottom of a soup can
- Sargento 4 Cheese Mexican Blend or shredded cheese of your choice
- Olive Oil
Instructions
- Directions:
- Preheat oven to 375 degrees
- Using a circle cookie cutter or the bottom of a can cut circles from the tortilla
- Place circle tortilla on cookie sheet
- Layer with shredded cheese
- Place another circle tortilla on top of the cheese making a quesadilla
- Brush tops of mini quesadilla with olive oil
- Bake at 375 degrees for 4-5 minutes
- Broil for 2 to make tops golden brown
