Blueberry & Corn Summer Salad

I was browsing Pinterest for the perfect summer salad, when I came across this dish on two peas & their pod blog I knew I had to try it. It’s so delicious and I can’t pass up anything that has cilantro in it. The hubby was a little skeptical of the blueberry and corn combo but I think the hint of jalapeño won him over!

Blueberry & Corn Summer Salad

Sweet Summer Salad
  • You will need:
  • For the salad:
  • 5 ears fresh corn-husked
  • 2 C fresh blueberries
  • 1 cucumber-chopped
  • 1/2 C red onion-chopped
  • 1/4 C cilantro-chopped
  • 1 jalapeño-remove seeds and chop
  • For the dressing:
  • 2 T lime juice
  • 1 T lemon juice
  • 2 T olive oil
  • 1 T honey
  • 1/2 TSP ground cumin
  • 1/2 TSP salt
  • 1/4 TSP black pepper
  1. Directions:
  2. Cook corn (I wrapped the corn individually with a paper towel and soaked it in the water, I put them on a plate and cooked them for 5 minutes-1 corn=1 minute)
  3. Once corn has cooled, remove corn from cob
  4. Combine corn, blueberries, chopped cucumber, chopped red onion, chopped cilantro and chopped jalapeño.
  5. For the dressing:
  6. Combine lime juice, lemon juice, olive oil, honey, ground cumin, salt and pepper. Whisk together until combined.
  7. Pour dressing over salad and mix well
  8. Cover and refrigerate until ready to serve
