Mexican Haystack, better known as my version of Chipotle

I love eating at Chipotle, my favorite thing to get is the burrito bowl. While browsing Pinterest I came across a recipe called Mexican Haystack. After looking over the ingredients, it sounded a lot like the things that come in my burrito bowl. I decided to try it out and change it up a little bit. Not only is it cheaper to make then spending $9 at Chipotle, it’s also a lot healthier for you.

You will need:

  • 2 cups uncooked rice (white or brown)
  • 1 bunch of fresh cilantro
  • 1 1/2 lbs ground turkey
  • Salt & Pepper
  • Fresh lime juice
  • 1 jar of salsa
  • 1 onion-chopped
  • Red peppers
  • Mangos


  1. Cook rice as directed 
  2. Mix rice with cilantro and lime juice
  3. Saute ground turkey & onion, add 1 jar salsa, cover & simmer for 20 minutes
  4. While that is sautéing, chop the pepper & mango
  5. Once the ground turkey is done, plate it as you desire whether you want to stack it like the picture below or mix it up in a bowl it will be delicious

    I just made this. It is delicious!!!! I used chicken broth for the rice but with the lime and cilantro just yummy !
