Irish Car Bomb Brownies

With the month of March coming to an end I’d figured I’d share the best recipe brownie recipe ever! I recently had these brownies at a St. Patricks Day Party. I was hesitant to try them at first because I do not like to drink Irish Car Bombs. Well these brownies do not taste anything like the drink, they are so moist and the icing does have a little bit of a booze taste to it but mixed with the confectioner sugar the icing is just as delicious as the brownie.

Irish Car Bomb Brownies


  • Ghirardelli Double Chocolate Brownie Mix
  • 1/2 C vegetable oil
  • 1/2 C Guinness (room temperature)
  • 1 egg
  • For the glaze:
  • 1 + 1/2 C confectioner sugar
  • 1 TBS water
  • 1 TBS Jameson Irish Whiskey
  • 1 TBS Bailey's Irish Cream


  1. **Follow the directions on the box except substitute water for room temperature Guiness**
  2. Preheat oven to 325 degrees
  3. Mix together egg, guinness and vegetable oil
  4. Add brownie mix
  5. Grease a 9X13 brownie pan
  6. Evenly distribute brownie batter in pan and bake for 20 to 25 minutes
  7. Check with tooth pick to make sure they are done
  8. Let cool and cut into squares
  9. Make glaze and put in a zip lock bag cutting corner off, drizzle brownies with glaze
