Lasagna Soup

I like to incorporate at least one pasta dish into my weekly meal menu so when I saw this I thought I’d give it a try. The total prep & cook time for this meal is 30 minutes which is even more of a reason to want to make it for dinner, remember simple & easy meals are key when you’re chasing around a toddler. The only thing I would do differently next time is add more beef broth. It cooked for 12 minutes but there wasn’t enough broth in the soup, so I’d say it turned into an Italian Goulash. It was so delicious and that’s all that really matters, right?

You will need:

  • 1 lb 90% lean ground beef
  • 1 medium onion-chopped
  • 1 cup frozen corn
  • 1 large green pepper-chopped
  • 2 garlic cloves-minced
  • 2 cans diced tomatoes
  • 2 cans beef broth (I’d add an additional can next time I make this)
  • 1 can (80z) tomato sauce
  • 1/4 cup tomato paste
  • 2 tsp italian seasoning
  • 1/4 tsp pepper
  • 2 1/2 cups uncooked pasta
  • 1/2 cup shredded Parmesan cheese


  1. In a large saucepan cook green peppers, onions & ground beef oven medium heat for 6-8 minutes or until meat is no longer pink
  2. Add garlic and cook 1 minute longer
  3. Drain
  4. Stir in tomatoes, broth, tomato paste, corn, italian seasoning & pepper
  5. Bring to a boil
  6. Stir in pasta
  7. Reduce heat & simmer, covered for 10-12 minutes or until pasta is tender
  8. Sprinkle with shredded Parmesan cheese
  9. Enjoy
