Lemon Butter Cookies


After making the delicious s’mores bars I was really craving something light and summery. I decided to browse Pinterest, my go to place for new things. I wanted something that had lemon in it so when I came across these Lemon Butter Cookies I knew they’d hit the spot. I was a little disappointed that they didn’t come out looking like the picture on the recipe I found but boy were they delightful. They definitely hit the spot and I knew they were too good not to share with you.

  • Cookies:
  • 1 cup and 2 tbs All-Purpose Flour
  • 1/3 cup sugar
  • 1 tbs lemon zest-finely grated
  • 7 tbs unsalted butter-cut into small pieces
  • 1 egg yolk
  • 3 tbs water
  • Glaze:
  • 1 cup powdered sugar
  • 3 tbs lemon juice
  1. Cookies:
  2. Combine flour, sugar and lemon zest into a mixing bowl
  3. Add chopped butter into the flour mixture
  4. Mix on medium-high until it looks like crumbs
  5. Add egg yolk and continue to mix on medium
  6. Once the dough has formed, wrap it saran wrap and put it in the fridge for 30 minutes
  7. Preheat your oven to 350 degrees
  8. After you remove it from the fridge form dough into 1 inch balls and flatten them on a cookie sheet that is lined with parchment paper
  9. Bake 10-12 minutes
  10. Allow them to cook for 2-3 minutes and then transfer them to a wire rack
  11. Once they are completely cool you can glaze them
