We try to eat at least one meal a week with chicken in it and I knew we needed to change it up. New year, new food right?! I have a “home base” binder that I keep bills, to do’s, my grocery list and new thing I am starting for 2015…a list of our family favorite quick and easy recipes. I loved the simplicity of this Lemon Chicken and Brussels Sprouts dish, it’s a 1 dish meal and we didn’t need any other side dishes because it was very filling.

Lemon Chicken and Brussels Sprouts


  • 2 TBS olive oil
  • 2 boneless skinless chicken breasts (cut into 4 pieces) about 1 1/2 lbs of chicken
  • 1/2 onion - diced
  • 3 cloves of garlic - minced
  • 1 lb brussels sprouts - chopped in half
  • 1 C chicken stock
  • 1 lemon or 2 TBS lemon juice
  • salt and pepper to taste


  1. Start by preheating your oven to 350 degrees
  2. In a large cast iron skillet or oven proof skillet heat 2 TBS of oil on high and salt and pepper your chicken breasts
  3. Add the chicken breasts and cook them 3 minutes per side
  4. Remove the chicken breasts and keep them on a separate plate, they will go back into the dish in a little bit
  5. Turn the stove down to medium and add the onions and garlic, sautéing for a few minutes
  6. Then add your brussels sprout to the skillet and cook until they start to brown
  7. Add chicken stock and lemon juice and stir
  8. Add the chicken breasts back to the pan, make sure they touch the bottom of the skillet
  9. Place the skillet into the oven
  10. Cook for 10-12 minutes
