One Pot Pasta

Pasta is a pretty regular meal in our household, I’d say at least once a week.  I am always looking for ways to change it up and try different things so when I came across this One Pot Pasta dish from Martha Stewart I knew I was on to something. With a couple tweaks here and there I came up with my own version and thought it would be perfect for my TNM readers.

One Pot Pasta

  • 12 oz linguini
  • 1 can - 14.5 oz - petite diced tomatoes
  • 1 medium yellow onion - cut into strips
  • 4 cloves garlic - sliced
  • 1 TSP red-pepper flakes
  • 2 TBS Extra Virgin Olive Oil
  • 4 C chicken or vegetable broth
  • Salt & Pepper to taste
  • 1 bunch of basil
  • Parmesan cheese

  1. Combine linguini, tomatoes, onions, garlic, red-pepper flakes and oil in a large pot
  2. Add 4 C of broth
  3. Cover pot and bring to a boil
  4. Once boiling, reduce to a low simmer and keep covered
  5. Cook 10-12 minutes stirring often
  6. Make sure to salt and pepper to taste
  7. Cook until almost all liquid has evaporated
  8. During the last 2 minutes add the basil leaves and stir to make sure evenly distributed
  9. Serve with parmesan cheese and enjoy!
