Sweet & Sour Chicken

You may find this surprising, but believe it or not I don’t always make dinner from scratch. At least once a week, if we don’t go out to eat, I pick up a frozen meal from the freezer section of my grocery store. One of my favorite freezer meals to make is Sweet & Sour Chicken. I was so excited when a friend of mine shared her Sweet & Sour Chicken recipe with me, I couldn’t wait to share it with you! It is sooo delicious and it takes less than 30 minutes to make. I love those kind of meals, simple and easy=amazing!!! Sweet & Sour Chicken


  • 1 pkg of Perdue short cuts
  • olive oil
  • 1 small med green bell pepper - sliced in strips
  • 1 small/med red bell pepper - sliced in strips
  • 2 med size carrots - shredded (about a cup)
  • 1 clove garlic - minced
  • 1 TBS cornstarch
  • 1/4 C low sodium soy sauce
  • 1 (8oz) can pineapple chunks with juice (don't drain)
  • 1 TBS vinegar
  • 1 TBS brown sugar
  • 1/2 TSP ground ginger
  • Rice - any kind


  1. In large skillet over med/high heat add chicken, both peppers, carrots, and garlic stir for 2 min
  2. In a small bowl combine cornstarch and soy sauce and mix together, pour mixture into the skillet along with the pineapple, vinegar, sugar and ginger.
  3. Stir together until everything is hot (about 15-20 minutes)
  4. Serve on top of rice
