Toddler Tuesday-Mac & Cheese Bites

Lately I’ve been struggling with new things to feed Matthew for dinner. We are very lucky that Matthew isn’t picky when it comes to the food we feed him. Breakfast and lunch are easy for me but when it comes to dinner I want him to try different things and step outside the usual peanut butter and jelly sandwich or chicken nuggets. That’s when I decided to play around with a recipe and make it more kid friendly. What I also love about this recipe is that even though they are the perfect size for children they are also great for adults too. I made sure to make a mini version as well as the regular size version so you could see the difference. Another awesome thing about this recipe is you can freeze the left overs and heat them up another day.

Mac & Cheese Bites

  • You will need:
  • 4 C cooked macaroni (make sure you measure after you’ve cooked it)
  • 1 T butter
  • 1 T flour
  • 1 C whole milk
  • 1 garlic clove-minced
  • 6 oz mozzarella cheese
  • 2 TBS parmesan cheese
  • 1 egg
  • 1 egg white
  • 1 (10 oz) package of frozen chopped spinach-defrost, drain & pat dry
  • Salt & Pepper to taste
  1. Directions:
  2. Preheat oven to 400 degrees
  3. Spray muffin tin or mini cupcake tin with cooking spray
  4. In a small pot, melt butter. Add the flour and mix until it becomes thick. Stir in milk and garlic and raise the temperature. Let boil and add cheese. Whisk until thoroughly combined.
  5. Remove cheese sauce from heat and mix in egg and egg white until combined.
  6. In a large bowl, combine the pasta, spinach and cheese sauce
  7. Add salt and pepper to taste
  8. Spoon the mixture into your muffin tins
  9. Bake 15-20 minutes or until the tops are slightly brown
I made 12 mini macaroni cupcakes & 8 regular sized macaroni cupcakes
